Well, it’s officially pumpkin season so it’s time to add them to one of my favourite desserts – brownies! They’re so simple to make keto in the Instant Pot. Cakes and brownies come out great in the Instant Pot as it creates even steam and heat all around the pan. It’s great for those hot days when you don’t want the oven on.
Whenever someone asks me what my favourite things to cook in the Instant Pot are, I always say Mexican Street Corn. Corn on the cob can be such a hassle to boil on the stove but it comes out perfect out of the pressure cooker! Topped with some delicious cheese and seasonings will keep you coming back for more.
I have the pleasure of presenting you red wine braised beef escalope or beef scallops. Beef escalope is a cut of beef that is too tough when quickly fried but absolutely delicious slow braised and a little more affordable than your average steak. So this will take a nice long slow simmer to get tender but it requires very little actual cooking time.
