Peach and Blue Cheese Steak Salad

Holy moly is it ever hot out there!?

The BBQ can be your best friend in the kitchen.. not only for keeping the heat outside of your house but for speed!

What’s better than a hardy salad to get you through these slow summer days.

Grilled Peach & Blue Cheese Steak Salad
serves 2, gluten-free

4 Peaches, cut down the middle and pitted.
1 T-Bone steak
1/2 cup crumbled blue cheese
4 Tbsp salad dressing of your choice, I used balsamic
3 cups assorted salad leaves

Heat grill on Medium-high.

Place steak on and cook for 5min.

Flip steak and put peaches on the grill flesh-side down. Grill steak to preferred temperature. Remove steak from grill to rest.

After peaches are on the Q for about 5 minutes, they should be charred and soft, flip and grill another 2 minutes. Remove from BBQ.

Cut steak off the bone and slice into thin strips. Slice the peaches into 1/2″ thick slices.

Wash and tear salad leaves until they’re bite sized. Dress with salad dressing and toss. Place on two large plates.

Divide crumbled blue cheese, steak and peaches between plates of salad greens.
